Milling wheat, feed wheat and the quality question
Not all wheat is the same product, and the difference between milling and feed grades is where a large amount of Ukrainian agricultural income is decided.
Wheat is traded as several distinct products. The one that matters commercially is the split between milling wheat, which becomes flour and bread, and feed wheat, which becomes animal feed at a materially lower price.
What determines the grade
Protein content above all, along with gluten quality, falling number — a measure of sprouting damage — test weight and impurities.
Some of that is decided by variety and by nitrogen management during the season. Some of it is decided in the last two weeks before harvest, when rain on ripe wheat can move a milling crop into the feed category overnight.
Why Ukrainian wheat often sells below its potential
Blending. Grain from many farms is combined at an elevator, and a mixed lot takes the grade of its weakest component. A farmer producing genuine milling wheat can find it averaged down by a neighbour's.
Storage. Grain that is stored wet or warm loses quality, and on-farm storage capacity is uneven.
And testing. Where a producer cannot demonstrate quality with a recognised analysis, they are paid as though they do not have it.
What capturing the premium requires
Segregation at harvest, which means the storage capacity to keep lots separate rather than tipping everything into one heap.
Testing at the farm gate, so quality is documented before the grain leaves.
And a buyer who pays for grade rather than volume, which means selling to a mill or a specialist trader rather than into an anonymous export chain.
Why it matters
The premium is significant and it is available to any producer willing to invest in storage and testing. It is one of the clearest cases in Ukrainian agriculture where a modest capital investment changes the price of the same physical crop.
Two prices coming out of the same product is, in industry too, a question of measurement and separation: a mixed batch takes the price of its worst component. Ukrainian wheat sells below its potential not because of what happens in the field but because of the missing separate storage after harvest. That is a problem solved far more cheaply than through seed.
